This week's recipe from the French Department: French chocolate macarons

French chocolate macarons are delicate, sweet, and absolutely delightful! They look fancy, but with a bit of patience, you can make them together. The crisp shells and smooth chocolate filling make them a treat worth sharing.
Ingredients (for about 12–15 macarons)
- 100 g icing sugar
- 50 g ground almonds (almond flour)
- 2 large egg whites
- 25 g caster sugar
- 2 tbsp cocoa powder
- 100 g dark chocolate
- 50 ml double cream
Method
- Prepare the dry mix: Sift icing sugar, ground almonds, and cocoa powder together.
- Whisk egg whites: Beat until foamy, then add caster sugar gradually. Keep whisking until stiff peaks form.
- Fold gently: Add the dry mix into the egg whites. Fold carefully until smooth and shiny.
- Pipe the shells: Spoon mixture into a piping bag. Pipe small circles onto baking paper.
- Rest the shells: Leave them at room temperature for 30 minutes until a skin forms.
- Bake: Bake at 160°C for 12–15 minutes. Let cool completely.
- Make the filling: Heat cream gently, pour over chopped chocolate, and stir until smooth.
- Assemble: Sandwich two shells together with a spoonful of chocolate filling.
